We work with restaurants, cafeterias, cloud kitchens and hotel kitchens across Dubai, usually at night. A kitchen closed for a plumber is a kitchen that is not earning.
Everything here reduces to fat. Oil leaves the pan hot and liquid, meets cold pipe, and sets. The grease interceptor is the only thing standing between your kitchen and the shared line beyond it. When the trap is undersized for the covers you actually serve, or emptied on an interval that suited whoever quoted it, fat carries straight past and hardens somewhere you cannot reach.
So we set the interval from the load, not the calendar. Interceptors serviced against throughput, jetting rather than rodding on any line carrying grease, and a camera in the run the first time it fails twice, because a line that reblocks on schedule usually has a defect and not a habit.
Work is booked after last service and finished before prep. Every visit leaves a dated record of what was done and what the line looked like, which is what you want in hand when somebody asks.
